Q: GDPR and authentication in Europe

Hi! This product is exactly what I have been looking for. I help elderly and disabled people with their IT problems, usually remotely. I don't charge clients much, just enough not to make a loss.
But for this product. I always need an electronic signature from the customer (required by Finnish law, don't ask me why) before connecting remotely, giving permission to use the remote connection. Is it possible to translate this interface into my native language (in this case Finnish)? Furthermore, I cannot use this product because it does not meet GDPR requirements. Couldn't you just rent server space in Germany and put e.g. a European version on the market, which meets GDPR requirements and has the possibility of strong authentication, so that the document is completely legal?
