Q: Servers in Europe

Data protection laws enforces EU institutions and businesses to use services with EU servers.

Is, or will it be soon, the case? Can we count in EU servers?

A: Great question. My understanding of GDPR is that it does not require EU-based servers, only that we treat EU-related data by the GDPR standards. If there are additional data protection laws, I'm not aware of them.

Regarding EU servers, even when we add EU-based video bridges to minimize latency, we're still likely going to be storing account data etc in the US.

Unfortunately, it is not so easy. EU servers would be very helpful, but you need to specify how, when, why you transmit what data to non european countries and under what circumstances and obligations. All of this should be no problem for european companies if you, for example, are certified under the data privacy framework (https://www.dataprivacyframework.gov/list).
