1. So If i have 2 courses under 1 brand then i will use 1 common brand changelog and roadmap But If i have 2 different apps then 2 projects will be used right?

In general yes, but in more simple terms, a project is a custom domain / portal environment. It is also possible to host multiple products in a single portal. Here is some example of that: https://app.productlift.dev/p/multi-product-configuration-c2TXCu

and administrate by themselves their account from there.
I charge them monthly. (Not trough PL. No need for that feature from you.)

Yes this is possible. Your clients can login on their own portal. You can also configure to use their email domain.
