I need some help understanding how I remain compliant with GDPR since your project is so heavily reliant on Google - Can you tell me more about where your servers are located? If there's third party tracking etc.?

IMHO you should ask Google about the GDPR compliance of your Google Sheet. This tool just takes data "as is" and makes it a website. There is no data storage on Sheetany in this step since the database used is your Google Sheet.
Further functionality might need cookies or something and this is where Sheetany must be compliant.
